Company Aims to Pour a "Just Cup" of Coffee
APRIL 20, 2009By Happynews Staff Thanksgiving Coffee Company brings a number of happy products to the market with its sale of fair trade, organic, shade-grown coffees like Sidama Natural
"High in the mountains of southern Ethiopia, amidst a dense overstory of plantains, acacia, and mango, the farmers of the Sidama Farmers Cooperative Union grow exquisite heirloom coffee varietals. In recent decades, traditional methods of coffee processing have been pushed aside by buyers looking for a standardized, more predictable coffee flavor. We’ve worked with the cooperative to return to their traditional “natural” method where the tart skin and sweet flesh of the fruit are sun-dried like a raisin onto the coffee bean. The result recaptures the wild complexity—rich port-like sweetness, syrupy body, and an intense berry flavor—that has made these coffees famous the world over for centuries."
